Steps
- Mix the lime juice, garlic, cumin, oregano, paprika, salt, and oil. Coat the chicken and let it sit.
- In a saucepan, soften half the onion in a spoon of the marinade oil if you have it, then stir in the rice and tomato until the rice looks coated. Add the broth, cover, and simmer until the rice is tender.
- Heat the oven to 425°F (220°C). Roast the chicken on a sheet pan until it is cooked through and the skin is browned.
- Warm the beans with the rest of the onion and a pinch of salt.
- Toss the cabbage with cilantro and a squeeze of lime. Serve the chicken with red rice, beans, and cabbage.
Make it work for kids. The marinade is mild. Put extra salsa on the side. The rice and beans are soft.
Plate guide. Plate guide for a smaller portion, including if you use a GLP-1 medication: eat the chicken first, then the cabbage, and keep the red rice to about 1/2–3/4 cup. A spoon of beans can sit with the vegetables. Cook the full family amount; everyone else takes a regular plate. General guidance, not medical advice.
General note. These tips are for adults who are eating less; kids take a regular plate. Serve the protein and vegetables first, then the starch. Have a glass of water alongside.
